Prepare a classic shrimp boil with minimal cleanup using this simple foil packet recipe. This method works well for grilling or baking.

Ingredients

Scale
  • 1 lb large shrimp, peeled and deveined
  • 1 lb smoked sausage (like Andouille), sliced into 1-inch pieces
  • 4 ears of corn, cut into 2-inch pieces
  • 1 medium yellow onion, sliced
  • 2 lemons, one sliced, one for juice
  • 8 tablespoons unsalted butter, melted
  • 2 tablespoons Cajun seasoning (or Old Bay)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 4 large sheets of heavy-duty aluminum foil

Instructions

  1. Preheat your grill to medium heat (about 375°F) or preheat your oven to 400°F.
  2. In a large bowl, combine the melted butter, Cajun seasoning, garlic powder, and black pepper. Mix well.
  3. Add the shrimp, sausage, corn pieces, and onion slices to the butter mixture. Toss gently until all ingredients are coated evenly.
  4. Lay out the four sheets of heavy-duty aluminum foil on a flat surface. Divide the shrimp mixture evenly among the four sheets, placing the mixture in the center of each sheet.
  5. Top each packet with a few slices of fresh lemon. Squeeze the juice from the remaining lemon half over the ingredients in the packets.
  6. Fold the foil over the ingredients. Bring the long edges together over the top and fold them down tightly to create a seam. Fold the short ends up to seal the packet completely, leaving a little room inside for steam circulation.
  7. Place the sealed packets directly on the grill grates or on a baking sheet in the oven.
  8. Grill for 12 to 15 minutes, or bake for 15 to 18 minutes, until the shrimp are pink and cooked through and the corn is tender.
  9. Carefully open the packets (watch out for hot steam) and serve immediately, directly from the foil.

Notes

  • Use heavy-duty foil; standard foil may tear during handling or cooking.
  • For extra flavor, add 1/2 cup of chicken broth to each packet before sealing.
  • If you do not have Cajun seasoning, use paprika, cayenne pepper, thyme, and oregano as a substitute.
