Make this easy, one-pan Sloppy Joe Cornbread Casserole for a quick, hearty weeknight meal the whole family will enjoy.

Ingredients

Scale
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 (15 ounce) can tomato sauce
  • 1/2 cup water
  • 1/4 cup brown sugar, packed
  • 2 tablespoons yellow mustard
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (15 ounce) can Manwich Original Sloppy Joe Sauce (or similar)
  • 1 (8.5 ounce) package cornbread mix (like Jiffy)
  • Ingredients listed on cornbread mix box (usually milk and eggs)
  • 1 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and the onion is soft. Drain off any excess grease.
  3. Stir in the tomato sauce, water, brown sugar, yellow mustard, Worcestershire sauce, chili powder, salt, and pepper. Bring the mixture to a simmer.
  4. Stir in the Manwich sauce. Cook for 5 minutes, stirring occasionally. Spread this sloppy joe mixture evenly into the bottom of the prepared baking dish.
  5. Prepare the cornbread batter according to the package directions, using the required milk and eggs.
  6. Pour the prepared cornbread batter directly over the sloppy joe mixture in the baking dish. Do not stir.
  7. Bake for 25 to 30 minutes, or until the cornbread topping is golden brown and a toothpick inserted into the center comes out clean.
  8. If using cheese, sprinkle the shredded cheddar evenly over the top during the last 5 minutes of baking, or immediately after removing from the oven.
  9. Let the casserole cool for 5 minutes before cutting and serving.

Notes

  • To prevent the cornbread from becoming soggy, make sure the sloppy joe filling is simmering but not boiling when you pour the batter on top.
  • For a richer flavor, substitute 1/2 cup of the water with beef broth.
  • You can add 1/2 cup of drained canned corn kernels to the sloppy joe mixture before topping with batter for extra texture.
