This easy slow cooker chicken stew recipe combines tender chicken and root vegetables in a rich, savory broth. It is the ultimate comfort food for busy weeknights or chilly weather.

Ingredients

Scale
  • 2 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 large yellow onion, chopped
  • 3 carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 2 cups potatoes (Yukon Gold or Russet), cubed
  • 4 cups low-sodium chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 1/2 cup cold water
  • 1/2 cup heavy cream (optional, for creamy stew)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Place the chicken pieces, onion, carrots, celery, and potatoes into the basin of your slow cooker.
  2. Pour the chicken broth over the ingredients. Add the thyme, rosemary, bay leaf, salt, and pepper. Stir gently to combine everything.
  3. Cover the slow cooker and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours, until the chicken is very tender.
  4. About 30 minutes before serving, remove the bay leaf. In a small bowl, whisk together the flour and cold water until smooth to create a slurry.
  5. Stir the flour slurry into the stew. Cover and cook on HIGH for 15 to 20 minutes, or until the stew has thickened.
  6. If you desire a creamy chicken stew, stir in the heavy cream now. Cook for another 5 minutes until heated through. Do not let it boil after adding cream.
  7. Taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley. This is a great dump and go chicken recipe for a satisfying dinner.

Notes

  • For extra flavor, sear the chicken pieces briefly in a hot skillet before adding them to the slow cooker. This adds depth to your crock pot chicken dinner.
  • If you skip the heavy cream, this recipe remains a healthy chicken crockpot recipe that is naturally gluten free.
  • This dish reheats well, making it perfect for slow cooker meal prep.
