Create elegant smoked salmon and dill crepes, blending deep, comforting flavors with a fresh, bright presentation perfect for a special brunch.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 2 tablespoons melted butter, plus extra for cooking
  • 4 ounces smoked salmon, thinly sliced
  • 1/4 cup fresh dill, chopped
  • 4 ounces cream cheese, softened
  • 1 tablespoon fresh lemon juice
  • Freshly ground black pepper to taste

Instructions

  1. Whisk together flour and salt in a bowl.
  2. In a separate bowl, whisk eggs, milk, and water.
  3. Gradually add the wet ingredients to the dry ingredients, mixing until smooth.
  4. Stir in the melted butter to form the crepe batter.
  5. Heat a crepe pan or non-stick skillet over medium heat. Lightly brush with butter.
  6. Pour about 1/4 cup of batter into the pan, quickly tilting to coat the bottom evenly. Cook for 1-2 minutes until the edges brown, then flip and cook for 30 seconds more. Slide onto a plate. Repeat with remaining batter.
  7. In a small bowl, mix the softened cream cheese, chopped dill, and lemon juice until combined. Season with pepper.
  8. Spread a thin layer of the cream cheese mixture onto each crepe.
  9. Top the cream cheese with slices of smoked salmon.
  10. Fold the crepes into quarters or roll them up.
  11. Serve immediately, garnished with extra dill if desired.

Notes

  • You can make the crepes ahead of time and store them layered between parchment paper in the refrigerator for up to two days.
  • For a lighter filling, use Greek yogurt instead of half the cream cheese.
  • Taste your batter; add a small pinch of salt if needed, remembering the salmon is salty.
