Create a crunchy, sweet, and salty Smoked Sea Salt Caramel Pretzel Bark. This recipe balances deep, comforting caramel with the bright crunch of pretzels and a hint of smoky salt. It’s a perfect treat for the holidays.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter
  • 1 cup packed light brown sugar
  • 1/2 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1 bag (12 ounces) semi-sweet chocolate chips
  • 3 cups broken pretzels
  • 1 tablespoon smoked sea salt (or more, to taste)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a medium saucepan, combine the butter, brown sugar, and corn syrup. Cook over medium heat, stirring constantly, until the mixture comes to a full boil. Boil for exactly 1 minute without stirring.
  3. Remove the pan from the heat. Quickly stir in the vanilla extract and baking soda. The mixture will foam up.
  4. Immediately pour the hot caramel mixture over the broken pretzels spread on the prepared baking sheet. Use a spatula to spread the pretzels into an even layer.
  5. Bake for 5 minutes. The caramel should be bubbly.
  6. Remove from the oven. Sprinkle the chocolate chips evenly over the hot pretzel mixture. Let stand for 5 minutes to soften the chocolate.
  7. Spread the melted chocolate into an even layer. Sprinkle generously with the smoked sea salt.
  8. Let the bark cool completely at room temperature, or place it in the refrigerator to set faster, about 1 hour.
  9. Once fully hardened, break the bark into irregular pieces. Store in an airtight container.

Notes

  • For an extra layer of flavor, you can stir 1/2 teaspoon of instant espresso powder into the melted chocolate.
  • If you do not have smoked sea salt, use flaky sea salt, but add a tiny drop of liquid smoke to the caramel before baking for a similar effect.
  • This bark stores well in a cool, dry place for up to one week.
