Ingredients

Scale
  • 1 pound elbow macaroni
  • 1 tablespoon olive oil
  • 1 cup pureed butternut squash (from about 1/2 pound squash)
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 3 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 4 cups shredded cheddar cheese
  • 1 cup shredded Gruyere cheese

Instructions

  1. Cook macaroni according to package directions. Drain and set aside.
  2. While macaroni is cooking, prepare the cheese sauce. In a large saucepan, melt butter over medium heat. Whisk in flour until smooth.
  3. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly, until sauce thickens.
  4. Stir in pureed butternut squash, salt, pepper, and nutmeg. Cook for 2 minutes, stirring.
  5. Remove from heat. Stir in cheddar and Gruyere cheeses until melted and smooth.
  6. Add cooked macaroni to the cheese sauce and stir to combine.
  7. Serve hot.

Notes

  • For a smoother puree, ensure there are no lumps.
  • Adjust seasoning to your preference.
  • Feel free to add other seasonings like garlic powder or paprika.
  • This mac and cheese can be baked for a crispy topping with breadcrumbs.
