Use your extra sourdough starter to make these incredibly soft and fluffy dinner rolls in about one hour. This quick recipe minimizes waste and delivers fresh, homemade bread for your table today.

Ingredients

Scale
  • 1 cup active sourdough discard
  • 1 cup warm water (about 105-115°F)
  • 2 tablespoons granulated sugar
  • 2 1/4 teaspoons active dry yeast
  • 3 1/2 cups all-purpose flour, plus more for dusting
  • 1 teaspoon salt
  • 1/4 cup unsalted butter, melted, plus 2 tablespoons for brushing

Instructions

  1. In a large bowl, combine the warm water, sugar, and yeast. Let this mixture sit for 5 to 10 minutes until it becomes foamy. This shows the yeast is active.
  2. Stir the sourdough discard into the yeast mixture until combined.
  3. In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a shaggy dough forms.
  4. Pour in the 1/4 cup of melted butter. Turn the dough out onto a lightly floured surface and knead for 5 to 7 minutes until the dough is smooth and elastic.
  5. Place the dough in a lightly oiled bowl, turning to coat. Cover the bowl with plastic wrap or a clean kitchen towel. Let the dough rise in a warm spot for 30 minutes. The dough will increase in size, but not necessarily double.
  6. Gently punch down the risen dough. Divide the dough into 12 equal pieces. Roll each piece into a smooth ball.
  7. Arrange the dough balls in a greased 9×9 inch baking pan, leaving a small space between them for them to touch as they bake.
  8. Cover the pan loosely and let the rolls rest for a final 15 minutes while you preheat your oven to 375°F (190°C).
  9. Bake for 18 to 20 minutes, or until the tops are golden brown.
  10. Remove the rolls from the oven. Immediately brush the tops with the remaining 2 tablespoons of melted butter.
  11. Serve these soft dinner rolls warm.

Notes

  • If your sourdough discard is very cold, let it sit on the counter for 30 minutes before starting to help the yeast activate faster.
  • For pull-apart sourdough discard rolls, place them closer together in the pan.
  • You can substitute the sugar with honey if you prefer a different flavor profile.
