Ingredients
Scale
2 cups fresh strawberries, hulled
1 cup fresh lemon juice (about 4-6 lemons)
1 cup granulated sugar
1 cup water (for simple syrup)
4 cups cold sparkling water or club soda
Ice cubes
Instructions
Prepare the strawberry simple syrup: Combine the sugar and 1 cup of water in a small saucepan. Heat over medium heat, stirring until the sugar dissolves completely. Remove from heat.
Add the hulled strawberries to the hot syrup. Lightly mash the strawberries with a spoon. Let the mixture steep for 30 minutes.
Strain the strawberry syrup through a fine-mesh sieve into a bowl, pressing gently on the solids to extract all the liquid. Discard the solids. You should have about 1.5 cups of strawberry syrup.
In a large pitcher, combine the fresh lemon juice and the cooled strawberry syrup. Stir well.
To serve, fill glasses with ice. Pour the strawberry-lemon base into the glasses, filling them about one-third full.
Top each glass with cold sparkling water. Stir gently.
Taste and adjust sweetness or tartness by adding a splash more lemon juice or syrup if needed.
Notes
For an extra layer of flavor, muddle a few fresh mint leaves in the bottom of your serving glasses before adding ice.
If you prefer a less sweet drink, start with 3/4 cup of sugar when making the simple syrup and adjust to your taste after mixing with the lemon juice.
Chill the strawberry syrup completely before mixing with the lemon juice and sparkling water for the best cold result.
