Make these warm, sweet, and spicy roasted nuts for a snack everyone will reach for. They are simple to prepare and full of comforting flavor.

Ingredients

Scale
  • 1 cup whole almonds
  • 1 cup pecan halves
  • 1 cup walnut halves
  • 1/4 cup granulated sugar
  • 2 tablespoons brown sugar, packed
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1 large egg white, lightly beaten
  • 1 tablespoon water

Instructions

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the almonds, pecans, and walnuts.
  3. In a small bowl, whisk together the granulated sugar, brown sugar, cinnamon, nutmeg, cloves, and salt. This is your spice mix.
  4. In a separate small bowl, whisk the egg white and water together until slightly frothy.
  5. Pour the egg white mixture over the nuts. Toss well until all the nuts are lightly coated.
  6. Sprinkle the spice mix over the coated nuts. Toss gently but thoroughly until every nut is evenly covered with the sugar and spice blend.
  7. Spread the coated nuts in a single layer on the prepared baking sheet. Do not let them overlap too much.
  8. Bake for 45 to 55 minutes, stirring every 15 minutes to prevent burning and promote even roasting. The coating should look dry and slightly caramelized.
  9. Remove from the oven. Let the nuts cool completely on the baking sheet. They will crisp up as they cool.
  10. Once cool, break apart any clumps and store them in an airtight container.

Notes

  • You can adjust the spice amounts to your liking. Add a pinch of cayenne pepper for an extra kick.
  • This recipe works well with other nuts like cashews or hazelnuts.
  • Cooling completely before storing is key to maintaining crispness.
