Ingredients
Scale
1 cup unsalted butter, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 cup dried cranberries
1/2 cup powdered sugar (for dusting)
Instructions
Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
Beat in the vanilla extract.
In a separate bowl, whisk together the flour, salt, cinnamon, and nutmeg.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined into a dough. Do not overmix.
Gently fold in the dried cranberries.
Press the dough evenly into the prepared baking pan.
Bake for 25 to 30 minutes, or until the edges are lightly golden brown.
Let the shortbread cool completely in the pan on a wire rack.
Once cool, lift the shortbread out of the pan using the parchment overhang.
Cut into squares. Dust generously with powdered sugar before serving.
Notes
For a deeper flavor, you can toast the dried cranberries lightly before adding them to the dough.
You can substitute dried cherries for cranberries if you prefer.
If you like a tangier bar, add 1 tablespoon of fresh orange zest to the dough.
