Ingredients

Scale
  • 1 lb ground pork
  • 2 tablespoons gochujang (Korean chili paste)
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1/4 cup water
  • 12 small corn or flour tortillas
  • For the Slaw:
  • 2 cups shredded cabbage (mix of red and green)
  • 1/2 cup shredded carrot
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
  • Pinch of salt
  • Optional Toppings: Sliced green onions, sesame seeds

Instructions

  1. In a medium bowl, whisk together the gochujang, soy sauce, rice vinegar, honey, sesame oil, ginger, and garlic. This is the rich flavor base.
  2. Add the ground pork to the bowl and mix until the meat is evenly coated with the sauce.
  3. Place the seasoned pork in a skillet over medium heat. Break up the meat as it cooks.
  4. Pour in the 1/4 cup of water. Cook, stirring occasionally, until the pork is fully cooked through and the liquid has reduced to a thick glaze, about 8 to 10 minutes.
  5. While the pork cooks, prepare the slaw. In a separate bowl, combine the shredded cabbage and carrot.
  6. In a small bowl, whisk together the lime juice, olive oil, sugar, and salt until the sugar dissolves.
  7. Pour the dressing over the cabbage mixture and toss well to coat. Let the slaw sit for a few minutes to slightly soften.
  8. Warm your tortillas according to package directions. You can heat them briefly in a dry skillet or microwave.
  9. Assemble your tacos. Spoon the spicy pork mixture into the warm tortillas.
  10. Top generously with the fresh slaw, green onions, and sesame seeds, if using. Serve immediately.

Notes

  • Gochujang heat levels vary. Adjust the amount based on your preference for spice.
  • For a deeper flavor, you can substitute ground pork with thinly sliced pork shoulder or thigh.
  • This slaw dressing provides the necessary brightness to cut through the richness of the pork.
