Ingredients
Scale
1 (15-ounce) can chickpeas, rinsed and dried
1 tablespoon olive oil
1 teaspoon smoked paprika
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper (adjust for spice preference)
1 teaspoon Za’atar spice blend
1/4 teaspoon salt
Instructions
Preheat your oven to 400°F (200°C).
Thoroughly pat the rinsed chickpeas dry with a clean kitchen towel or paper towels. Drying them well helps them get crisp.
In a medium bowl, toss the dried chickpeas with olive oil until lightly coated.
In a small bowl, mix together the smoked paprika, cumin, cayenne pepper, and Za’atar.
Sprinkle the spice mixture over the oiled chickpeas. Toss again until the spices evenly cover the chickpeas. Add salt now.
Spread the seasoned chickpeas in a single layer on a baking sheet lined with parchment paper.
Roast for 20 to 30 minutes, shaking the pan halfway through, until the chickpeas are golden brown and crunchy.
Remove from the oven and let them cool completely on the baking sheet. They will crisp up more as they cool.
Notes
Make sure your chickpeas are very dry before roasting for the best crunch.
You can store leftovers in a container at room temperature for up to a week.
Taste the spices before adding salt; Za’atar blends often contain salt already.
