Enjoy these easy Spinach Artichoke Stuffed Chicken Breasts, a flavorful and comforting meal perfect for any occasion. This recipe combines tender chicken with a creamy spinach and artichoke filling, baked to golden perfection.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup chopped fresh spinach
  • 1/2 cup chopped artichoke hearts (canned or jarred, drained)
  • 1/4 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, combine the chopped spinach, artichoke hearts, cream cheese, Parmesan cheese, and minced garlic. Season with salt and pepper to your liking. Mix well until all ingredients are thoroughly combined.
  3. Place the chicken breasts on a clean surface. Carefully cut a pocket into the thickest side of each chicken breast. Be careful not to cut all the way through.
  4. Generously stuff each chicken breast pocket with the spinach and artichoke mixture.
  5. Season the outside of the chicken breasts with salt and pepper.
  6. Heat the olive oil in an oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for 2-3 minutes per side, until lightly browned.
  7. Transfer the skillet to the preheated oven.
  8. Bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  9. Let the chicken rest for a few minutes before serving.

Notes

  • For an extra layer of flavor, you can add a pinch of red pepper flakes to the filling.
  • If you don’t have an oven-safe skillet, you can sear the chicken in a regular skillet and then transfer the stuffed chicken breasts to a baking dish.
  • Serve with your favorite side dishes like roasted vegetables or a fresh salad.
