- 6 large egg whites
- 1 cup fresh spinach, chopped
- 1/4 cup crumbled feta cheese
- 1 teaspoon olive oil
- Salt, to taste
- Black pepper, to taste
- Heat the olive oil in a non-stick skillet over medium heat.
- Add the chopped spinach to the skillet. Sauté until wilted, about 2 minutes.
- In a bowl, whisk the egg whites with salt and pepper until slightly frothy.
- Pour the whisked egg whites over the spinach in the skillet.
- As the edges set, gently push the cooked egg towards the center, tilting the pan so the uncooked egg flows underneath.
- When the top is mostly set but still slightly wet, sprinkle the feta cheese over one half of the omelette.
- Carefully fold the empty half over the feta side.
- Cook for one minute more until the cheese is just starting to melt.
- Slide the omelette onto a plate. Serve immediately.
Notes
- You can add a splash of water or milk to the egg whites for a fluffier result.
- Use fresh herbs like chives or dill for extra taste.
- Wipe out the pan between batches if you are making more than one omelette.
