Ingredients

Scale
  • 1 box jumbo pasta shells
  • 1 (15 ounce) container ricotta cheese
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
  • 1 cup shredded mozzarella cheese, plus more for topping
  • 1/2 cup grated Parmesan cheese
  • 1 large egg, lightly beaten
  • 1/4 teaspoon ground nutmeg
  • Salt and black pepper to taste
  • 1 (24 ounce) jar marinara sauce

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the pasta shells according to package directions until al dente. Drain and rinse with cold water to stop cooking.
  3. In a medium bowl, combine the ricotta cheese, dried spinach, 1 cup mozzarella cheese, Parmesan cheese, egg, nutmeg, salt, and pepper. Mix well.
  4. Spread about 1 cup of marinara sauce in the bottom of a 9×13 inch baking dish.
  5. Stuff each cooked shell with the ricotta mixture. Arrange the filled shells in a single layer in the prepared baking dish.
  6. Pour the remaining marinara sauce over the stuffed shells.
  7. Sprinkle the top evenly with extra mozzarella cheese.
  8. Bake for 25 to 30 minutes, or until the sauce is bubbly and the cheese is melted and lightly golden.
  9. Let the dish rest for a few minutes before serving.

Notes

  • Squeeze the thawed spinach very dry; excess water makes the filling runny.
  • You can prepare the stuffing ahead of time and keep it refrigerated.
  • Use your favorite high-quality marinara sauce for the best flavor.
