Enjoy a delightful summer treat with these easy Strawberry Shortcake Ice Cream Sandwiches. They perfectly combine sweet strawberries, fluffy shortcake, and creamy ice cream for a handheld dessert everyone will love.

Ingredients

Scale
  • 1 pint fresh strawberries, hulled and sliced
  • 2 tablespoons granulated sugar
  • 1/4 cup powdered sugar
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1 quart vanilla ice cream, softened

Instructions

  1. In a bowl, toss the sliced strawberries with granulated sugar. Let them sit for about 15 minutes to macerate.
  2. In another bowl, cream together the softened butter, powdered sugar, and vanilla extract until light and fluffy.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Add the dry ingredients to the butter mixture alternately with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  5. Spread the batter evenly into a greased 8×8 inch baking pan.
  6. Bake at 375°F (190°C) for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Let it cool completely.
  7. Cut the cooled shortcake into squares.
  8. Scoop softened vanilla ice cream onto one shortcake square and top with another shortcake square to create a sandwich.
  9. Gently press the sides of the ice cream sandwich into the macerated strawberries.
  10. Repeat with remaining shortcake and ice cream.
  11. You can freeze the sandwiches for about 30 minutes to firm up before serving.

Notes

  • For an extra touch, you can add a sprinkle of fresh mint to the strawberries.
  • Ensure your ice cream is softened but not melted for easier assembly.
  • These sandwiches are best enjoyed immediately after assembly or after a brief freeze.
