Capture the vibrant, zesty, and creamy flavors of Mexican street corn in this easy-to-make salad. This recipe balances smoky charred corn with fresh lime and Cotija cheese, making it a perfect summer side dish for any gathering.

Ingredients

Scale
  • 4 cups fresh or frozen corn kernels (thawed if frozen)
  • 1 tablespoon olive oil
  • 1/2 cup mayonnaise (or Greek yogurt for a lighter version)
  • 1/2 cup Mexican crema or sour cream
  • 1/2 cup crumbled Cotija cheese, plus more for topping
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1/4 cup finely chopped fresh cilantro
  • 1/2 teaspoon chili powder (or more, to taste)
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup finely chopped red onion
  • 1 jalapeƱo, seeded and minced (optional, for heat)

Instructions

  1. Prepare the corn: If using fresh corn, slice kernels off the cobs. Heat the olive oil in a large skillet over medium-high heat. Add the corn and cook, stirring occasionally, until the kernels are lightly charred and tender, about 5 to 7 minutes. Remove from heat and let cool slightly. This charring step is key for authentic flavor.
  2. Make the dressing: In a medium bowl, whisk together the mayonnaise (or Greek yogurt), Mexican crema or sour cream, lime juice, chili powder, smoked paprika, salt, and pepper until smooth.
  3. Combine ingredients: In a large bowl, combine the slightly cooled charred corn, chopped red onion, minced jalapeƱo (if using), and most of the Cotija cheese and cilantro. Reserve some cheese and cilantro for garnish.
  4. Mix the salad: Pour the dressing over the corn mixture. Gently fold everything together until the corn is evenly coated.
  5. Chill and serve: Taste the salad and adjust seasoning if needed (more lime or salt). Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Garnish: Before serving, sprinkle the top with the reserved Cotija cheese and fresh cilantro. Serve this vibrant vegetable salad chilled or at room temperature.

Notes

  • For the best smoky flavor, use a cast-iron skillet to char the corn. If you do not have a grill, this method works well.
  • If you want a Street Corn Pasta Salad variation, cook 8 ounces of small pasta (like rotini) according to package directions, drain, and toss with the dressing before adding the corn mixture.
  • Cotija cheese is traditional, but you can substitute it with feta cheese if Cotija is unavailable.
