Make a bright, sweet fruit salsa using fresh seasonal fruit, served with homemade cinnamon sugar tortilla chips for dipping.

Ingredients

Scale
  • 2 cups diced mango
  • 1 cup diced pineapple
  • 1 cup sliced strawberries
  • 1 cup blueberries
  • 1/2 cup finely diced kiwi
  • 1/4 cup lime juice (freshly squeezed)
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 12 small flour tortillas
  • 2 tablespoons melted butter
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Prepare the salsa: In a medium bowl, gently combine the mango, pineapple, strawberries, blueberries, and kiwi.
  2. In a small bowl, whisk together the lime juice, honey, and vanilla extract.
  3. Pour the lime mixture over the fruit and toss gently to coat. Cover and chill the salsa for at least 30 minutes before serving.
  4. Prepare the chips: Preheat your oven to 350°F (175°C). Lightly grease a baking sheet.
  5. Cut each tortilla into 8 wedges.
  6. In a small bowl, mix the granulated sugar and cinnamon together.
  7. Brush both sides of the tortilla wedges lightly with melted butter.
  8. Place the wedges in a single layer on the prepared baking sheet.
  9. Bake for 8 to 10 minutes, flipping halfway through, until the edges start to turn golden brown and crisp.
  10. Remove the chips from the oven. While they are still warm, immediately sprinkle both sides generously with the cinnamon-sugar mixture.
  11. Let the chips cool completely on the baking sheet until they are fully crisp.
  12. Serve the chilled fruit salsa with the cooled cinnamon tortilla chips.
