  • 1 small red onion, chopped
  • 1 bell pepper (any color), chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (15 ounce) can black beans, rinsed and drained
  • Optional toppings: fried eggs, avocado, cilantro, salsa

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced sweet potatoes and cook for 10-12 minutes, stirring occasionally, until tender and slightly browned.
  3. Add chopped red onion and bell pepper to the skillet. Cook for another 5-7 minutes until softened.
  4. Stir in minced garlic, chili powder, cumin, smoked paprika, salt, and pepper. Cook for 1 minute until fragrant.

Notes

  • For crispier sweet potatoes, you can roast them separately before adding them to the skillet.
  • Adjust the spices to your preference. Add a pinch of cayenne pepper for a spicier kick.
  • This hash is versatile and can be served with various proteins or as a vegetarian main dish.
