Enjoy this warm and slightly sweet hash featuring tender sweet potatoes and savory chorizo, a perfect dish to start your day. Mei brings a fresh twist to Spoon’s traditional flavors.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 8 ounces fresh chorizo, casing removed
  • 2 medium sweet potatoes, peeled and diced (about 3 cups)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh cilantro (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chorizo and cook, breaking it up with a spoon, until fully browned, about 5-7 minutes. Remove the chorizo with a slotted spoon and set aside, leaving about 1 tablespoon of rendered fat in the skillet.
  3. Add the diced sweet potatoes to the skillet. Cook, stirring occasionally, for 10-12 minutes, until they begin to soften and brown.
  4. Stir in the cinnamon, salt, and pepper. Cook for 1 more minute until fragrant.
  5. Return the cooked chorizo to the skillet. Stir to combine everything well.
  6. Cook for another 2-3 minutes until the potatoes are tender.
  7. Serve immediately, garnished with fresh cilantro.

Notes

  • If you prefer a lighter dish, drain off most of the excess fat after cooking the chorizo.
  • Adjust the cinnamon to your taste preference; a little more can deepen the sweetness.
  • This hash pairs wonderfully with a fried or poached egg on top.
