Enjoy a comforting, nostalgic dinner with this Sweet and Sour Meatloaf with Bacon. It brings together deep, familiar flavors with a bright, fresh twist, just how we like it at Spoon & Sprout.

Ingredients

Scale
  • 2 pounds ground meat (beef, pork, or a mix)
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg, lightly beaten
  • 1 small onion, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 6 slices bacon
  • For the Glaze:
  • 1 cup ketchup
  • 1/2 cup brown sugar, packed
  • 1/4 cup apple cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Lightly grease a loaf pan.
  2. In a large bowl, combine the ground meat, breadcrumbs, milk, egg, onion, salt, and pepper. Mix gently until just combined; do not overmix.
  3. Shape the meat mixture into a loaf and place it in the prepared loaf pan.
  4. Arrange the bacon slices across the top of the meatloaf in a lattice pattern or side-by-side.
  5. In a small bowl, whisk together the ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, and Dijon mustard for the glaze.
  6. Spread about half of the glaze mixture evenly over the bacon-topped meatloaf.
  7. Bake for 45 minutes.
  8. Remove the meatloaf from the oven and brush with the remaining glaze.
  9. Return to the oven and bake for another 15 to 20 minutes, or until the internal temperature reaches 160 degrees F (71 degrees C).
  10. Let the meatloaf rest for 10 minutes before slicing and serving.

Notes

  • We often use a mix of ground beef and pork for the best flavor and moisture.
  • For an extra layer of flavor, try adding a teaspoon of smoked paprika to the meat mixture.
  • This meatloaf pairs wonderfully with creamy mashed potatoes and steamed green beans.
