A simple, hearty breakfast casserole using frozen tater tots, eggs, sausage, and cheese that you can assemble the night before for an easy morning bake.

Ingredients

Scale
  • 1 (32 ounce) bag frozen tater tots
  • 1 pound breakfast sausage or bacon, cooked and crumbled
  • 1 cup chopped onion
  • 1 cup shredded cheddar cheese, divided
  • 12 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Grease a 9×13 inch baking dish.
  2. Arrange half of the frozen tater tots in a single layer on the bottom of the prepared dish.
  3. Sprinkle the cooked sausage or bacon, chopped onion, and half of the shredded cheese over the tater tots.
  4. Top with the remaining tater tots, arranging them in a single layer if possible.
  5. In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  6. Pour the egg mixture evenly over the layers in the baking dish.
  7. Cover the dish tightly with plastic wrap or foil. Refrigerate for at least 4 hours or overnight.
  8. When ready to bake, preheat your oven to 375 degrees Fahrenheit. Remove the plastic wrap or foil.
  9. Bake for 40 minutes.
  10. Sprinkle the remaining half of the cheese over the top.
  11. Bake for an additional 5 to 10 minutes, or until the eggs are set and the cheese is melted and lightly golden.
  12. Let the casserole rest for 5 minutes before cutting and serving.

Notes

  • For best results when making ahead, do not add the cheese topping until just before baking.
  • You can substitute ham or ground turkey for the sausage.
  • If baking immediately, allow the casserole to sit at room temperature for 30 minutes before putting it in the oven, and increase the initial bake time by 5 minutes.
