Ingredients
Scale
3 cups sweet potatoes, cooked and mashed (about 3 large)
1/2 cup unsalted butter, melted
1/2 cup packed light brown sugar
1/4 cup granulated sugar
2 large eggs, lightly beaten
1/2 cup milk
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Pinch of salt
1 cup mini marshmallows (for topping)
Instructions
Preheat your oven to 350°F (175°C). Lightly grease an 8×8 inch baking dish.
In a large bowl, combine the mashed sweet potatoes, melted butter, brown sugar, and granulated sugar. Mix well.
Whisk in the eggs, milk, vanilla extract, cinnamon, nutmeg, and salt until the mixture is smooth.
Pour the sweet potato mixture into the prepared baking dish, spreading it evenly.
Bake for 25-30 minutes, or until the edges are set.
Remove the casserole from the oven. Sprinkle the mini marshmallows evenly over the top.
Return the casserole to the oven for 5-7 minutes, or until the marshmallows are golden brown and toasted. Watch closely to prevent burning.
Let the casserole cool for a few minutes before serving. Enjoy this comforting treat.
Notes
For the best flavor, use sweet potatoes that have been baked or roasted, not boiled.
You can toast the marshmallows under a broiler for a faster, darker toast if you prefer.
