Make this easy toffee Chex mix recipe for a crunchy, sweet, and salty snack perfect for parties or holidays.

Ingredients

Scale
  • 12 cups Chex cereal (rice, corn, or wheat)
  • 1 cup pretzel twists
  • 1 cup pecan halves
  • 1 cup (2 sticks) unsalted butter
  • 2 cups packed light brown sugar
  • 1/2 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon salt

Instructions

  1. Preheat your oven to 250 degrees Fahrenheit. Line two large baking sheets with parchment paper.
  2. In a very large bowl, combine the Chex cereal, pretzels, and pecans. Set aside.
  3. In a medium saucepan, combine the butter, brown sugar, and corn syrup. Heat over medium heat, stirring constantly until the mixture boils.
  4. Once boiling, continue to cook for exactly 4 minutes without stirring. Remove from heat immediately.
  5. Stir in the vanilla extract. Then, quickly stir in the baking soda and salt; the mixture will foam up.
  6. Pour the hot toffee mixture evenly over the cereal mixture. Gently fold everything together until the cereal is fully coated. Work quickly.
  7. Spread the coated mix in a thin, even layer onto the prepared baking sheets.
  8. Bake for 45 minutes, stirring every 15 minutes to prevent burning and promote even crisping.
  9. Remove from the oven and let the mix cool completely on the sheets before breaking it apart. The crunch develops as it cools.

Notes

  • For an extra layer of flavor, you can stir in 1 cup of white chocolate chips or M&Ms after the mix has cooled for 15 minutes.
  • Store the finished toffee Chex mix in an airtight container at room temperature for up to one week.
  • If you prefer a darker toffee flavor, use dark brown sugar instead of light brown sugar.
