Bake a spectacularly rich and indulgent Toffee Pecan Pie, featuring a deep caramel flavor and crunchy pecans nestled in a flaky crust. This dessert is a perfect balance of comforting tradition and bright, new flavor.

Ingredients

Scale
  • 1 (9-inch) unbaked deep-dish pie crust
  • 1 cup light corn syrup
  • 1 cup packed light brown sugar
  • 4 tablespoons unsalted butter, melted
  • 4 large eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 1/2 cups pecan halves
  • 1/2 cup homemade or high-quality caramel sauce (plus extra for drizzling)

Instructions

  1. Preheat your oven to 350°F (175°C). Place your pie crust on a baking sheet.
  2. In a medium bowl, whisk together the corn syrup, brown sugar, melted butter, eggs, vanilla extract, and salt until well combined. This is the Spoon’s comforting base.
  3. Gently fold in the pecan halves.
  4. Pour the filling mixture into the unbaked pie crust.
  5. Drizzle the 1/2 cup of caramel sauce lightly over the top of the filling. Do not stir it in; let it create ribbons.
  6. Bake for 50 to 60 minutes. The center should be mostly set but still have a slight wobble.
  7. Let the pie cool completely on a wire rack for at least 3 hours before slicing. This allows the filling to set properly.
  8. Before serving, warm any extra caramel sauce and drizzle it generously over the top of the pie. Share the warmth.

Notes

  • For a fresher touch (Sprout’s way), try using maple syrup partially in place of the corn syrup for a different depth of sweetness.
  • If your crust edges brown too quickly, cover them loosely with aluminum foil halfway through baking.
  • Serving this pie slightly warm brings out the gooey texture of the toffee filling.
