Ingredients
Scale
1 loaf day-old bread, cut into 1-inch cubes
1 tablespoon unsalted butter
2 large yellow onions, thinly sliced
1/2 teaspoon salt
1/4 teaspoon black pepper
4 large eggs
2 cups whole milk
1 cup heavy cream
1/2 teaspoon Dijon mustard
1/4 teaspoon nutmeg
1 cup shredded Gruyère cheese
1 cup shredded sharp white cheddar cheese
1/2 cup grated Parmesan cheese
Instructions
Preheat your oven to 350 degrees F. Butter a 9×13 inch baking dish.
In a large skillet over medium heat, melt the butter. Add the sliced onions and cook slowly, stirring often, until deeply caramelized, about 20-25 minutes. Season with salt and pepper.
In a large bowl, whisk together the eggs, milk, heavy cream, Dijon mustard, and nutmeg until well combined.
In the prepared baking dish, layer half of the bread cubes. Sprinkle with half of the Gruyère and half of the white cheddar cheese. Top with half of the caramelized onions.
Add the remaining bread cubes, the rest of the cheeses, and the remaining onions.
Slowly pour the milk and egg mixture evenly over the bread and cheese layers. Gently press down to help the bread absorb the liquid.
Sprinkle the top evenly with the grated Parmesan cheese.
Bake for 45 to 55 minutes, or until the pudding is puffed, golden brown, and a knife inserted near the center comes out clean.
Let the bread pudding rest for 10 minutes before you serve it warm.
Notes
Using day-old or slightly stale bread gives the best texture for this savory bake.
Caramelize the onions slowly; this step builds the deep flavor foundation of your pudding.
You can prepare this up to the point of baking, cover it, and refrigerate it overnight. Add 10-15 minutes to the baking time if baking directly from the refrigerator.
