Ingredients
Scale
1 cup frozen pineapple chunks
1/2 cup canned full-fat coconut milk
1/2 cup water or unsweetened almond milk
1 tablespoon shredded unsweetened coconut
1 teaspoon lime juice (optional)
1 teaspoon sweetener (honey or maple syrup, optional)
Instructions
Place the frozen pineapple chunks, coconut milk, water or almond milk, shredded coconut, lime juice, and sweetener (if using) into a high-speed blender.
Secure the lid and blend on high speed until the mixture is completely smooth and creamy. Stop and scrape down the sides if necessary.
If the smoothie is too thick, add more liquid, one tablespoon at a time, until you reach your desired consistency.
Pour the smoothie into a glass immediately and serve.
Notes
Use frozen pineapple for the best thick and cold texture without needing ice.
For a richer coconut flavor, substitute the water/almond milk with more coconut milk.
Add one scoop of vanilla or unflavored protein powder for a post-workout boost.
