Enjoy this rich and flavorful Truffle Parmesan Garlic Mashed Cauliflower. It’s a fantastic low-carb alternative to traditional mashed potatoes, bringing deep, savory tastes to your table.

Ingredients

Scale
  • 1 large head of cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 cup heavy cream (or unsweetened almond milk for fewer carbs)
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon white truffle oil
  • 1/4 teaspoon salt, or to taste
  • 1/8 teaspoon black pepper, or to taste
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Steam or boil the cauliflower florets until they are very tender, about 10-15 minutes.
  2. Drain the cauliflower well. You want to remove as much water as possible.
  3. In a small skillet, heat the olive oil over medium heat. Add the minced garlic and cook for about one minute until fragrant. Do not let the garlic brown.
  4. Transfer the drained cauliflower to a food processor or a large bowl.
  5. Add the sautéed garlic and oil mixture, heavy cream, Parmesan cheese, truffle oil, salt, and pepper to the cauliflower.
  6. Process or mash until completely smooth and creamy. You can use a hand mixer for a fluffier texture.
  7. Taste and adjust salt or pepper as needed.
  8. Serve immediately, garnished with fresh parsley.

Notes

  • For the best texture, press the cooked cauliflower through a fine-mesh sieve after draining to remove excess moisture.
  • If you prefer a stronger garlic flavor, roast the garlic cloves instead of sautéing them before mixing them in.
  • You can substitute butter for the olive oil for a richer taste.
