Ingredients
Ripe Bananas (about 1 1/2 cups mashed)
All-Purpose Flour (2 cups)
Granulated Sugar (3/4 cup)
Brown Sugar (1/2 cup, packed)
Unsalted Butter (1/2 cup, melted)
Eggs (2 large)
Milk (1/4 cup)
Baking Soda (1 teaspoon)
Salt (1/2 teaspoon)
Vanilla Extract (1 teaspoon)
Ground Cinnamon (1 teaspoon, for batter)
Streusel Flour (1 cup)
Streusel Sugar (1/2 cup)
Streusel Brown Sugar (1/4 cup, packed)
Streusel Unsalted Butter (1/4 cup, cold, cubed)
Streusel Cinnamon (1 teaspoon)
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
In a large bowl, mash the ripe bananas until mostly smooth.
Stir the melted butter, granulated sugar, and brown sugar into the mashed bananas.
Add the eggs one at a time, mixing well after each addition. Mix in the milk and vanilla extract.
In a separate bowl, whisk together the flour, baking soda, salt, and 1 teaspoon of cinnamon.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Prepare the streusel: In a small bowl, combine the streusel flour, streusel sugar, streusel brown sugar, and 1 teaspoon of cinnamon. Cut in the cold butter using a pastry blender or your fingers until coarse crumbs form.
Pour half of the batter into the prepared loaf pan. Sprinkle half of the streusel mixture evenly over the batter. Pour the remaining batter on top. Finish by sprinkling the remaining streusel over the top layer.
Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
Notes
Use very ripe, spotty bananas for the best flavor and moisture.
Ensure your streusel butter is cold for a crumbly topping.
