Follow these steps to construct the definitive BLT sandwich using perfectly crisp bacon, ripe tomatoes, fresh lettuce, and a simple homemade garlic aioli on toasted sourdough.

Ingredients

Scale
  • 4 slices sourdough bread
  • 8 slices thick-cut bacon
  • 2 medium heirloom tomatoes, sliced 1/4 inch thick
  • 4 large leaves crisp lettuce (e.g., Romaine or Butter)
  • 1/4 cup mayonnaise
  • 1 small clove garlic, minced
  • 1 teaspoon fresh lemon juice
  • Pinch of salt
  • Freshly ground black pepper

Instructions

  1. Cook the bacon: Place bacon strips in a cold skillet. Cook over medium heat, turning often, until uniformly crisp. Remove bacon and place on a paper towel-lined plate to drain excess fat.
  2. Prepare the aioli: In a small bowl, combine the mayonnaise, minced garlic, and lemon juice. Stir well. Season with a small pinch of salt and pepper.
  3. Toast the bread: Lightly brush one side of each bread slice with a small amount of the reserved bacon fat or butter. Toast the bread in the skillet or a toaster until golden brown and firm.
  4. Assemble the sandwich: Spread a thin, even layer of the garlic aioli on the untoasted side of all four bread slices.
  5. Layer the ingredients: On two slices of bread, layer the lettuce, followed by the tomato slices. Season the tomatoes lightly with salt and pepper.
  6. Add the bacon: Place four slices of crisp bacon over the tomatoes on each sandwich base.
  7. Close and serve: Top with the remaining bread slices, aioli-side down. Slice the sandwiches in half diagonally immediately before serving.

Notes

  • Use high-quality, thick-cut bacon for the best texture and flavor.
  • For superior tomatoes, let the slices sit for two minutes after seasoning to allow the salt to draw out flavor.
  • Sourdough bread holds up best against the moisture of the tomatoes and aioli.
