Indulge in this creamy, decadent Vanilla Bean Panna Cotta. It is a rich, silky Italian dessert that captures the pure flavor of vanilla. This recipe balances deep, comforting tradition with a fresh, light finish.

Ingredients

Scale
  • 2 cups Heavy Cream
  • 1/2 cup Granulated Sugar
  • 1 Vanilla Bean, split and scraped
  • 1 teaspoon Vanilla Extract (optional, for extra flavor)
  • 1 packet (about 2 1/4 teaspoons) Unflavored Gelatin
  • 1/4 cup Cold Water

Instructions

  1. Pour the cold water into a small bowl and sprinkle the gelatin over the top. Let it bloom for 5 to 10 minutes until spongy.
  2. In a medium saucepan, combine the heavy cream and sugar. Add the scraped vanilla bean seeds and the pod to the cream mixture.
  3. Heat the cream mixture over medium heat, stirring occasionally, until the sugar dissolves and small bubbles form around the edges. Do not boil.
  4. Remove the saucepan from the heat. Discard the vanilla bean pod.
  5. Stir the bloomed gelatin into the warm cream mixture until it is completely dissolved. If using, stir in the vanilla extract now.
  6. Pour the mixture through a fine-mesh sieve into a clean bowl to catch any undissolved bits.
  7. Carefully pour the liquid into individual ramekins, small glasses, or molds.
  8. Cover the tops of the ramekins with plastic wrap, touching the surface of the liquid, to prevent a skin from forming.
  9. Refrigerate for at least 4 hours, or preferably overnight, until the panna cotta is fully set.
  10. To serve, you can dip the bottom of the ramekin briefly in hot water for easy unmolding, or serve directly in the glass. Garnish as desired.

Notes

  • For the purest vanilla flavor, use a real vanilla bean.
  • If you prefer a very light dessert, use a little less cream or add a splash of milk when heating.
  • Chilling time is essential for the correct texture; do not rush this step.
  • Serve with fresh berries or a light caramel sauce for a beautiful contrast.
