Enjoy a delicious, dairy-free take on classic Mexican street corn. This recipe uses vegan mayo, nutritional yeast, and coconut feta for a creamy, cheesy flavor, perfect for a plant-based lifestyle.

Ingredients

Scale
  • 4 ears of corn, husked
  • 1/2 cup vegan mayonnaise
  • 1/4 cup nutritional yeast
  • 2 tablespoons fresh lime juice
  • 1/4 teaspoon chili powder, plus more for dusting
  • 1/4 teaspoon smoked paprika
  • Salt to taste
  • 1/4 cup crumbled coconut feta cheese (optional)
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. Preheat your grill or oven to medium-high heat.
  2. Grill or roast the corn until tender and lightly charred, about 10-15 minutes, turning occasionally.
  3. While the corn is cooking, whisk together the vegan mayonnaise, nutritional yeast, lime juice, chili powder, and smoked paprika in a small bowl. Season with salt to taste.
  4. Once the corn is cooked, carefully brush each ear with the vegan mayo mixture.
  5. Sprinkle with additional chili powder, coconut feta (if using), and fresh cilantro.
  6. Serve immediately and enjoy!

Notes

  • For a spicier kick, add a pinch of cayenne pepper to the mayo mixture.
  • If you don’t have coconut feta, you can omit it or use another vegan cheese alternative.
  • This dish is best served fresh off the grill.
