Ingredients

Scale
  • 8 sheets rice paper wrappers
  • 1/2 lb cooked shrimp, peeled and deveined, halved lengthwise
  • 1 cup shredded lettuce
  • 1 cup shredded carrots
  • 1/2 cup thinly sliced cucumber
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh cilantro leaves
  • 1/4 cup thinly sliced red bell pepper
  • Optional: Rice vermicelli noodles

Instructions

  1. Prepare your ingredients: Have all your fillings ready and within reach.
  2. Soak the rice paper: Dip one rice paper wrapper in warm water for about 15-20 seconds, or until pliable.
  3. Assemble the roll: Lay the softened wrapper flat on a clean surface.
  4. Add fillings: Arrange a few shrimp halves, lettuce, carrots, cucumber, mint, cilantro, and red bell pepper near the bottom edge of the wrapper. If using, add a small portion of vermicelli noodles.
  5. Fold the sides: Fold the left and right sides of the wrapper inward over the filling.
  6. Roll tightly: Starting from the bottom edge with the filling, tightly roll the wrapper upwards to create a compact spring roll.
  7. Repeat: Continue with the remaining wrappers and fillings.
  8. Serve: Serve immediately with your favorite dipping sauce.

Notes

  • For a vegetarian version, omit the shrimp and add more vegetables or tofu.
  • Soak the rice paper wrappers one at a time to prevent them from sticking together.
  • If the wrappers are too stiff, soak them for a few more seconds. If they are too soft, they may tear.
  • Experiment with different herbs and vegetables based on your preference.
