Ingredients
Scale
8 ounces feta cheese, block form
4 ounces cream cheese, softened
2 tablespoons olive oil, plus extra for drizzling
1 tablespoon lemon juice, fresh
1/4 teaspoon black pepper
1 cup fresh or frozen cranberries
1/4 cup water
2 tablespoons granulated sugar
1 tablespoon honey
1/2 teaspoon orange zest
Instructions
Combine feta cheese, softened cream cheese, 2 tablespoons olive oil, lemon juice, and black pepper in a food processor.
Process until the mixture is smooth and creamy, scraping down the sides as needed.
Transfer the whipped feta to a serving bowl.
To make the compote, combine cranberries, water, sugar, and honey in a small saucepan.
Bring the mixture to a simmer over medium heat. Cook, stirring occasionally, for 8 to 10 minutes, until the cranberries burst and the mixture thickens slightly.
Remove the compote from the heat. Stir in the orange zest.
Let the compote cool for about 15 minutes.
Spoon the cranberry compote over the whipped feta.
Drizzle with a little extra olive oil before serving.
Notes
Serve this dip with crusty bread, pita chips, or fresh vegetables.
You can prepare the whipped feta up to two days ahead and keep it covered in the refrigerator.
If the compote seems too thick after cooling, stir in a teaspoon of water to loosen it.
