Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 pound cooked, shredded chicken breast
  • 1 (10 ounce) can red enchilada sauce
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 cup cooked white rice
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 small (8-inch) flour tortillas, cut into quarters
  • 2 cups shredded Monterey Jack cheese, divided
  • 1 cup shredded cheddar cheese, divided
  • 1/2 cup chicken broth

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and cook for 1 minute more until fragrant.
  3. Stir in the shredded chicken, enchilada sauce, black beans, cooked rice, cumin, chili powder, oregano, salt, and pepper into the skillet. Mix well to combine all the ingredients.
  4. In a small bowl, mix 1 cup of the Monterey Jack cheese and 1/2 cup of the cheddar cheese. Set aside.
  5. Spread a thin layer of the chicken mixture on the bottom of the prepared baking dish.
  6. Arrange half of the cut tortilla pieces over the chicken mixture in a single layer. Sprinkle with half of the reserved cheese mixture.
  7. Spoon half of the remaining chicken mixture evenly over the tortillas and cheese layer.
  8. Pour the chicken broth evenly over the filling.
  9. Top with the remaining tortilla pieces, followed by the remaining chicken mixture.
  10. Sprinkle the remaining 1 cup Monterey Jack cheese and 1/2 cup cheddar cheese over the top layer.
  11. Bake for 20 to 25 minutes, or until the casserole is bubbly and the cheese is melted and lightly golden brown.
  12. Let the burrito bake rest for 5 minutes before cutting and serving.

Notes

  • Serve this cheesy burrito bake with your favorite toppings like salsa, sour cream, or guacamole for extra flavor.
  • For meal prep, assemble the casserole completely, cover tightly, and refrigerate for up to 2 days before baking. Add 10 minutes to the baking time if baking from cold.
  • You can substitute ground beef for the chicken; brown the beef first and drain off any excess fat before mixing with the other ingredients.
