Ingredients
Scale
1 cup rolled oats
1/2 cup peanut butter
1/2 cup vanilla or unflavored protein powder
1/4 cup maple syrup or honey
2 tablespoons water or milk
1/4 cup dark chocolate chips (for drizzle)
Instructions
Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
In a medium bowl, combine the rolled oats, protein powder, peanut butter, and maple syrup.
Mix the ingredients thoroughly until a thick, uniform dough forms. If the mixture is too dry, add water or milk one teaspoon at a time until it holds together when pressed.
Press the dough evenly into the prepared pan. Use the back of a spoon or your fingers to compact it firmly.
Place the pan in the freezer for at least 30 minutes to set.
Melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth.
Drizzle the melted chocolate over the chilled bar mixture.
Return the pan to the freezer for another 10 minutes until the chocolate hardens.
Lift the bars out using the parchment paper overhang and cut into 10 even squares.
Notes
Store the finished bars in an airtight container in the refrigerator for up to one week.
For a vegan option, use maple syrup instead of honey and ensure your protein powder is plant-based.
If you prefer a firmer bar, reduce the liquid slightly in step 2.
